What makes specialty coffee special?

You might have wondered what makes our coffee different than the coffee you might find at a grocery store or have experienced in the past. That is a good and fair question. I mean, why should you move that one item off your grocery list and purchase it from somewhere else? Growing up, I remember seeing my dad drink coffee from the old, red, metal Folgers coffee can. My brother and I would use a couple empty ones, along with some wire, to make an old school telephone. I followed in my dad’s footsteps and started drinking the same coffee when I was an adult. It wasn’t until many years later when I started scouring the internet to see if there were any other brands of coffee out there that might be a step above what I had experienced so far. Through this research, I ran across an article that made a startling statement. It said that coffee, if it is freshly roasted, can actually be a sweet beverage.

I didn’t know what to think of this. First of all, wasn’t the coffee I had been drinking fresh? Surely the reputable companies wouldn’t be selling me a product that wasn’t fresh, would they? So began my research of freshly roasted specialty coffee. I was suspicious of the term specialty coffee. What exactly did that phrase mean? I came to find out that it actually did mean something very important. 75% of the world’s coffee is from the Coffea Arabica L species, as opposed to the lower grade Coffea canephora (Robusta), which is high grown in ideal climates and soil. The top 5% of Arabica coffee has the quality necessary to be considered specialty coffee. Specialty coffee possesses unique flavors and has little to no defects. Furthermore, coffees from different countries or regions have their own unique flavor characteristics, so the excitement never ends.

I also found that coffee is a food item that stays fresh from 2-4 weeks after it is roasted. It made sense that if it was a food item it wouldn’t stay good forever. However, I wanted to verify this for myself and compared my grocery store coffee to some freshly roasted coffee from a local coffee shop. Drumroll…it was a night and day difference. The freshly roasted coffee was bursting full of unique and complex flavors. On the one hand I was excited to discover a whole new dimension of coffee and on the other hand knew I was forever ruined!

Anything is possible

Like many, I suppose, I was handed a belief system early on in life, telling me what to think and believe. I think many of us are not encouraged to develop our sense of wonder, question things, and learn for ourselves what we want to believe. We were taught to obey, not to think, question, or doubt what we are being told. This way of living limited my life and the possibilities I saw for myself. I viewed my life through tunnel vision and didn’t believe that I could do something amazing. I want to tell you today to believe in the things that your heart can see. See them as already being a reality. Your life can be as amazing as you want it to be. Live expansively with lots of space in your life for amazing possibilities to come into existence. Learn to stay in this present moment, staying open to every possibility. Anything is possible. If you don’t give up on your dreams they will come true. However, you may have to clear up some space in your life to make room for new and marvelous things to enter. If you don’t feel like you have much space inside, it is probably time to let things go or get help processing some events from your past. Work though things that are keeping you stuck in your mind. As you learn to let go and quiet your mind, you will live more and more in the present moment. In reality, there is only NOW, this present moment. As we learn to live in this present moment, moment to moment, you will be surprised at what can happen in your life. Limit yourself and you limit your possibilities. Wishing everyone a happy New Year. This time of year we hear a lot about new years resolutions. Rather than incorporate the rigidity of new rules, we at Red-Headed Philosopher Coffee seek to find the natural flow and rhythm of life. There is an Italian phrase, “Il Dolce far niente,” which means “the sweetness of doing nothing.” Within this phrase is the idea of doing whatever you do for the sheer joy of it rather than simply to complete a task or abide by a self imposed rule. May you be inspired to follow your dreams and find the balance between doing and being.

Pairing coffee with snacks- Part 1

So, you have been enjoying your exotic, freshly roasted coffee and it has been altering your state of consciousness. OK, maybe that is an overstatement. However, you may have been wondering, “What can I do to take my coffee experience to the next level?” Well, just as different wines pair well with certain foods, so certain types of chocolate pair well with different types of coffees. Today I would like to make some suggestions of how to enjoy a remarkable experience by fusing these two tasty food items. Full bodied coffees, such as the Red-Headed Philosopher’s Burundi and Brazilian coffee’s pair well with dark chocolate. You could even try a dark chocolate brownie with these coffees. We find the flavors in the dark chocolate compliment these coffees well. Some of our lighter coffees such as our Ethiopian and Kenyan coffees pair well with lighter, milk chocolate. Furthermore, the fruity notes in these lighter coffees go amazing well with fruit dipped in chocolate, such as a chocolate covered strawberry. These are just suggestions and what we have found enjoyable. Play around with different chocolates and see what tastes best to you.
